Ingredients
- 1.4 kg Chickpeas, canned, drained & rinsed
- 2 Tbsp + 2 tsp Vegetable oil
- 1 Tbsp + 1 tsp Garlic powder
- 1 Tbsp + 1 tsp Chili powder
- 1/2 tsp Ground cayenne pepper
- 2 tsp Salt
Preparation
- Preheat an oven to 425 ̊F (218 ̊C). Do not use any convection. Line a full-size baking sheet with parchment paper.
- In a large mixing bowl toss the chickpeas with the oil and seasonings. Spread the chickpeas out evenly on the baking sheet.
- Bake until golden and crisp, 25-35 minutes. Move the chickpeas around for even cooking halfway through the bake time.
- Remove from the oven and let cool completely before placing into a container for storage, as any condensation will cause the chickpeas to soften.
- Sprinkle 1/2 cup on salads, in wraps or eat as a snack
Chef’s notes: You can save and freeze the aquafaba (liquid from canned, unsalted chickpeas) to use in other recipes. Portion into 1/2 cup portions, label and freeze for later use.
